Depending on the purpose of use, a cutter set with two cutters can be replaced with an intermediate disc with same thickness.1.2 Cutter setsA full cutter set consists of the stop disc with two inlaid segments, the balancing disc and two radial opposite cutters, that are screwed onto the fixed segments in the stop disc.In the cutter set 1, a filler piece and then the second cutter is mounted opposite the first cutter. In the same manner, a filler piece is fastened opposite the second cutter.1.3 Stop discEach stop disc is made of a solid steel core with a central bihexagonal and four taps for fixing the inlaid segment. Two stop bolts used in each of the stop segments serve as stopper for a cutter blade. The cutter blade is screwed to the Einlegesegment.For easy handling of the cutter sets, the outer ring of the stop disc is made of plastic. The distance is about1,3 - 1,8 mm.All cutter knives are of the blade length.The tips of the knives are not ground when resharpening. Theinsert segments are used to properly align the knives with thecutter bowl (Fig. 2 and 3, pos. 1)Each insert segment has been fitted with two solid stop bolts.The distance between the boreholes for the stop bolts isvariable in a radial direction of the knives, so that it is possibleto adjust the knife in relation to the rim of the bowl.Segments are available from size 1 to 10. One difference insize number corresponds to a change in distance of 1 mm.The cutter head is factory set; cutter set 1 is typically fitted withan insert segment size 10, the other cutters sets are fitted withan insert segment of size 8 or 9.If the tip of a knife has been damaged making it necessary toresharpen it, the edge of the knife can be adjusted in relation tothe rim of the bowl by using smaller sized insert segments.Segments in sizes 1-10 mm can be reordered from K+GWetter.Figure 4 Adjust cutter setThe cutter sets must be balanced with the adjusting andUser informationCutter head WMK 360l + 550l -2MEN_WMK-2M-MK_Ubersetzung Originalbetriebsanweisung V1.2.docx 02.05.2013 12:11:00 page 9balancing device (included with the cutter mixer) if they aredismantled, e.g. for cleaning and grinding. To do this, proceedas follows:1. Place the completly cutter set (Figure 2 and 3) on theadjusting hexagon (Figure 4) of the adjusting device.Check for a secure fit of the insert segment fixing screws inrespect of the stop disk (Fig. 4).2. Place cutter on the cutter head disc, stop on the stop boltsand tighten with the fixing screw (Figure 5).3. Turn cutter against the adjusting screw (Figure 4).Attention, the number marking on the balancing disc mustmatch with the marking on the adjusting screw (seeFigure 4).4 Check the distance from the adjustment screw to theforemost cutter tip. The cutter head has been factory set; itmust be easy to turn the tip of the knife past the adjustmentscrew.5. Should this not be the case with a new knife, the knife is toolong and its tip must be ground.If knives have been resharpened (perhaps due to damage)and consequently are too short, the distance to the cutterbowl, i.e. the adjustment screw, can be properly adapted byusing a new insert segment.Insert segment size 1-10Figure 56. The cutter is assembled at the cutter-mixer.To prevent the cutter from breaking, use only blades that havebeen precisely ground (see chapter 4), adjusted (seechapter 2.1) and balanced (see chapter 2.2). Otherwise, they will have to be reset.- To assemble a 4-piece cutter head, cutter set 2 (Figure 10,Pos. 4) must be replaced by an additional intermediate discand cutter set 3 must be pushed 90? to 1 onto the cutter shaft.- To assemble an 8-piece cutter head, the first of theintermediate discs (Figure 10, Pos. 6) must be replaced bythe cutter set 4. The locking screw is permanently connected to the cap nut.Attention! The retaining screw will be destroyed if it is not completely unscrewed from the thread of the cutter shaft before the cutter head is loosened.? Place power tool on cap nut.? Unscrew cap nut and discs, and remove cutter sets from the cutter shaft one by one.? If the grindingwork is to be carried out externally, please hand over thesegrinding instructions to the grinding company.For all grinding tasks, the cutter blades must not be overheatedat the grinding location, as otherwise it can result in materialstress and cracks. Overheating is detected by the yellow-brownto blue colouring.4.1 Grinding- As far as possible, grind cutter blades of a cutter head so thatthey remain balanced.- Grind cutter blade only from thecrown side with a water-cooledgrinding stone, so that the originalgrinding angle (normally 27o) ispreserved.- Grinding with belt grinder withapprox. 3 -3.5 m grinding beltlength. First with grain size 150,then with grain size 240.Bild 10- Grind only in lengthwise direction to prevent hairline cracks.- Polish to a high finish using a polishing wheel or sisal cordbrush and polishing paste.- Deburr and clean cutter blade with a grinding stone.Attention! However, corrosion resistance is affected by chloride compounds as they occur in every sausage. Consequently, this can cause pitting in case of inadequate cleaning, which in turn can lead to cutters breaking in high vibration areas. To prevent this and to ensure hygienic production, the cutter head must be cleaned daily as follows:- Dismantle the cutter head as described in chapter 3.2.- Dismantle the cutter sets.- Remove all dirt, especially on bearing surfaces of the cutter and on the balancing discs by brushing off with a cleaning agent.- Then clean all parts in the dishwasher or rinse thoroughly with clean water.- Before reassembling the cutter head, dry all parts thoroughly and grease slightly with K+G Wetter edible grease.- As cleaning agent, a mixture of drinking water and detergent is permitted in the concentration recommended by the manufacturer.5.2 TestingThe cutters are exposed to a high flexural load during cutting operations. Therefore, after grinding, they must be tested as follows:- Hairline crack test!
