0 General information
 For a safe and troublefree operation of the machine, all safety information and regulations must be understood. It contains the most important information for the safe installation and operation of the machine. Furthermore, compliance with the rules and regulations on accident prevention and industrial hygiene applicable to the place of installation is essential.
The user information belongs to the machine and must be always kept accessible to professionally trained and operating personnel.
When handing over the machine to someone else, also include this user information.

1 Safety Information
 All people in charge of installation, startup, operation and maintenance of the machine have to carefully read and comply with these operating instructions. If someone is not capable to read or understand this manual, all instructions and safety rules must be explained to him thoroughly. This concerns your safety!
 The user has to instruct his employees on the use of the machine according to the operating manual. It is recommended to keep a record of these instructions given.
The user has to observe local regulations, e.g.:
- obtaining an operating license,
- health regulations,
- industrial safety regulations and employment prohibitions,
- supply and disposal requirements,
- emission and environmental protection requirements.
Keep minors, children and people not instructed away from the machine!
 The operator shall undertake to permit only those people to work on the machine who:
have been instructed in the operation of the machine and are familiar with the basic work safety and accident prevention rules.
- have read and understood this user information, especially the chapter on safety and the warnings.
 The operating company has to compile Operating Instructions that take into account the User Information according to the standard EN 12855. We recommend to keep records about the instructions given to operators and the operating instructions.
 The operation and servicing of the machine involve dangers described in the Young Persons Employment Act (§ 22). Only workers older than 18 years may use the machine on their own. Do not let unauthorised persons use the machine.
Check the machine for damage!
 Before using the machine carefully check whether the safety equipment works properly and as directed.
 If the supervisor detects safety equipment that is not working properly, he is obligated to have it repaired immediately or replaced. Until then he has to give appropriate instructions which ensure safe operation of the machine.
 Check the functioning of moving parts. Make sure they move easily and are not damaged. Mount all parts correctly and as directed to ensure the perfect operation of the machine.
 Unless otherwise specified in the user information, defective protective gear, switches, cables or other parts must be replaced by K+G WETTER customer service or an authorised customer service.

Exercise care when handling the machine
 Follow the cleaning and maintenance instructions and the instructions for changing cutter heads. Only sharp and clean tools work properly and safely!
 Always keep handles and operational controls dry, clean and grease-free.
Main switch off!
 Switch off the main switch when the machine is not in use, before cleaning and maintenance and when replacing the cutter head. Only use the keys in the operator panel for switching on and off.
Check cable!
 Make sure the mains cable does not get hot and does not run over sharp edges. Regularly check for damages.
Personal protection equipment to be provided!
 Appropriate work clothes pursuant to industrial hygiene regulations and industrial safety regulations.
 Appropriate protective gloves made of material reinforced with metal fiber, for instance, must be worn for installation or assembly of the cutter head.
 If the noise level exceeds 80 dBA, the owner must provide hearing protection.
If the noise level exceeds 85 dBA, the operating personnel must wear hearing protection.
Transport and cleaning buggy
We recommend use of our transport and cleaning buggy for depositing, storage, cleaning, readying and provision of knives, the knife head and stuffing plate.

3 Intended use
 The machine is utilised for the industrial mincing of meat, meat products, fish, fruit and vegetables for human consumption. The products used must meet local health regulations. Additionally, frozen meat at temperatures down to -15 °C and of a 80 mm diameter can be processed.
 You can also use this machine to grind products listed here, if these are not meant for human consumption.
 Use the machine only for applications indicated in the scope of application. In particular, you are prohibited to use the machine for processing frozen blocks of meat that are colder than - 15 °C, with a diameter larger than 80 mm. Changing from applications for human consumption to applications not intended for human consumption and vice versa is only permissible if such is in conformance with industrial hygiene regulations.
 Only use balanced K+G WETTER cutter heads.
 Only use the accessories provided or recommended by the manufacturer.
 Comply with inspection and maintenance intervals.

4 Reasonably foreseeable misuse and residual risks
 The use of impermissible raw materials for processing can lead to injury of the operating personnel and/or to machine damage.
 No measures have been provided for protection against dust or infection hazards that may be caused by the processed product. If required, additional measures have to be taken to prevent such risks.
 Do not lower the unloader into the bowl if the cap of the cleaning opening is unscrewed. The personnel is to be instructed at regular intervals, at least once a year, using these Operating Instructions.
 Only operate the machine with its cover closed. To feed the product, the cover may only be opened for a short time while the machine is running.
 The cutters are properly protected by the cutter cover, the guards, the flap trap, and the warning triangle. However, if handled improperly they can be reached with your hands. You are prohibited to reach under the closed cutter cover.
 The machine is equipped with a high-speed cutter system. After opening the knife cover a brake stops the knives within 4 seconds in accordance with regulations. You are prohibited from reaching into the cutting area before the cutters have completely stopped
 The cutters may break and the machine may sustain damage, if the machine is used with an improperly installed cutter head or improperly ground cutters.
Only use balanced cutter heads for cutting speeds exceeding 3600 RPM.

 The cutters may jam or break, if the machine is fed with impermissible raw materials for processing or quantities exceeding the specified bowl capacity. The machine may stop running and the motor might overheat.
 Use the main switch to deactivate the main circuit of the machine. This disables the electrically controlled safety systems. It is prohibited to deactivate the machine using the main switch during operation.
 The emergency-stop switch only effects the control circuit and thus must not be used to disconnect the machine from the power supply.
 If there is a machine malfunction, you must wait with any manual interventions until all movements have stopped. Then deactivate and secure the main switch. Contact the customer service department to have the machine repaired.

The machine is a self-supporting machine that meets all static and dynamic requirements. It meets all health requirements of the EEC machinery directive and the EEC directives for handling meat and meat products.
All outer machine elements are made of non-corroding material. The complete surface of the machine was subject to special treatment and therefore is easy to clean. Due to its large doors all areas are easily accessible for cleaning and maintenance.
The cutter shaft is driven in cutting and mixing mode by a infinitely variable and reversible motor via a highly efficient V-belt unit. The basin is driven by a separate 2 speed motor with reversible polarity. The infinitely variable reversible cutter shaft speeds and the independently controlled 2 basin speeds enable the optimum operating mode for the production of all processed meat products. A temperature and basin shutdown enables the automation of production.
5.2 Workplace
This machine has been designed for one-man operation.
The operator works at the front of the machine, at the operator panel.

6 Installation instructions
6.1 Information for handling, transport and storage
The machine is delivered with a built-in cutter set and dismantled
lifting device. The switch cabinet and the vacuum pump are delivered
as separate parts. The machine must be transported using devices
which support the whole base of the machine
6.2 Conditions for installation
The machine has been designed for installation on a solid,
waterproof floor, which can be easily cleaned. The slope of the floor
should not exceed 3%; the admissible floor-loading capacity has to
be at least 1000 kp/m². The place of installation has to meet the local
health and work place regulations. Luminous intensity has to amount
to at least 300 Lux.
6.3 Required space for operation and maintenance
The operator works in front of the machine. The machine has to
accessible from all sides for cleaning and maintenance (approx. 110
cm to the sides and behind the machine). Without the operator's
work place the machine requires a space about 2,5 m wide and 1,2
m deep.

6.4 Installation of the machine
The cutting mixer is delivered with the lifting device dismantled.
The machine should be installed and commissioned by
K+G WETTER customer service or an authorised contractor.
The cutter basin must be aligned so that it is horizontal by means of
the machine legs. Finally lock the legs with the lock-nuts. The weight
must be distributed uniformly over all the machine feet.
6.4.1 Installing the switch cabinet
The switch cabinet should be mounted near the machine, out of the
way of paths and if possible on the wall. The correspondence of the

switch cabinet to the cutting mixer must be unambiguously clear or indicated.
6.4.2 Installing the vacuum pump
The operating instructions for the vacuum pump must be observed when installing the vacuum pump. The vacuum pump should be mounted near the machine, out of the way of paths and if possible on the wall. It must be supplied with water. On the suction side, the pump must be connected to the cutting mixer; on the delivery side the air/water mixture must be conducted to a floor drain. The plastic hoses required for this purpose are included with the machine.
6.5 Supply connections
All supply connections must be made at the place of installation by K+G Wetter service personnel or accordingly trained and authorised qualified personnel.
6.6 Electrical connection
The machine may only be connected to the mains by a qualified electrician.
The system is delivered with the connection cables from the switch cabinet to the cutting mixer and to the vacuum pump. The customer is responsible for their connection to the machine terminals, according to the included circuit diagram, by a qualified electrician.
The electrical connection should be carried out according to the technical specifications on the identification plate and in Chapter 1. The cable diameter must be determined according to the fuse in the cable. Neutralisation, earthing, residual current or overcurrent release protection should be installed according to the conditions on site.
6.6.1 Compressed air connection (Option)
The compressed air connection is only provided if the cutting mixer is equipped with a steam cooker.
The cutting mixer must be connected by the customer to the compressed air connection (6 mm hose connection. The compressed air must be de-humidified and de-oiled. The pressure must be between 6 and 8 bar.
6.6.2 Steam connection (Option)
The steam connection is only provided if the cutting mixer is equipped with a steam cooker.
The cutting mixer must be connected with the steam connection ½ " inner thread by the customer. The steam must be of potable quality. The steam pressure must be between 0.5 and 2 bar. The machine is delivered without a pressure reducer.

6.6.1 Hot water connection (option)
The hot water connection is only available, if the machine is equipped with a hot water boiling unit.
The customer must connect the machine to the ½ ‘’ tapped hot water connection.. The water must be of drinking water quality. The water pressure must be between 3 and 6 bar. The machine is shipped without a pressure reducer.
6.6.2 Water connection
The vacuum pump must be connected to a water connection by the customer.

The water must be of potable quality. The water pressure must be between 3 and 6 bar. The water throughflow to the vacuum pump must be set in accordance with the vacuum pump operating instructions with the pump running and the stop valve open so that the vacuum manometer of the pump reads 0 bar.
If the cutting mixer is equipped with a steam cooker, the cutting mixer must also be connected to a water connection.
6.6.3 Water drainage
The water drainage from the cutting mixer and vacuum pump may be over the ground, if possible near a ground drain.

6.7 Tests before commissioning
The following tests are required before commissioning:
Check mains voltage and frequency
Comparison of the reading of the electricity supply station meter with the figure on the rating plate. Customer service should be informed of any discrepancy. The voltage variations may not be larger than + 10% and - 5%. Malfunctions and premature wear may be expected with larger deviations. The guarantee provisions do not apply in this case.
Check the direction of rotation with continuously adjustable key drive:
Inspection of direction of rotation by an engineer using rotating field measuring instrument. Ensure “Clockwise rotating field” at machine main switch!
6.7.1 Vakuum pump
Fill the vacuum pump with water. Switch the pump on briefly and check the motor direction of rotation (see arrow on pump housing). If the direction of rotation is wrong, the polarity of the connection cables of the pump must be changed by a qualified electrician.
6.8 Initial startup
After installation by K+G WETTER customer service, checks, cleaning and, where necessary, mounting of the cutter set, the machine is ready for use.

7 Protective measures
7.1 Protective equipment and its functions
7.1.1 Main switch
The main switch disconnects the machine from the power supply (except terminal and main switch cable), and stops all functions of the machine. To start the machine set the main switch to "I". Stop the machine by switching it to "0". The switch can be secured with a padlock. For switching during operation, the keys on the operator panel must be used, otherwise the safety functions may be put out of operation.
7.1.2 Emergency-stop switch
Use the emergency-stop switch to prevent or reduce risks of danger to people or objects. If you use the emergency-stop switch, all motors will be turned off and the knife shaft will be stopped by a brake within 4 seconds. When hitting the emergency-off switch it will lock, pull the emergency-off switch to unlock it.
The emergency-off switch only affects the control voltage circuit. It does not shut down the main circuit and therefore cannot be used to switch on the voltage of the machine. This can only be done via the main switch.
In case this switch is defective, only have K+G WETTER service staff or personnel from an authorized repair shop replace it with an equivalent switch.
7.1.3 Machine safety switch
A safety switch, which is located inside the machine monitors the closed condition of the cutter cover.
The switch have a person protection function.
Only K+G WETTER customer service or another authorised dealer is allowed to replace it with a switch of the same kind.
7.1.4 Limit switches
Activation of the vacuum function is only possible with the vacuum cover closed. The closed vacuum cover position is locked via a limit switch.
If defective, this switch should only be replaced with an equivalent switch by K+G WETTER service personnel or an authorised repair shop.
7.1.5 Covers
To prevent people from touching drive and electrical components, these are hidden behind the housing, doors and screw-fixed covers. Before opening the doors or covers the main switch must be set to "0". You are only allowed to start the machine, if the housing is completely closed.
7.1.6 Vacuum cover
The vacuum cover also serves to reduce airbourne noise emissions. The cutting mixer must only be operated with the vacuum cover

closed. The vacuum cover may be briefly opened for adding material. The closed condition of the cover is monitored by a switch. The machine will switch down to a lower cutter RPM if the vacuum cover is opened during operation, to enable the adding of material whilst the machine is running.
7.1.7 Cutter cover
The purpose of the cutter cover is to make sure that nobody touches the rotating knives. Operate the machine only when the cutter cover is closed. Closed condition is controlled by a switch in the machine housing.
The machine will come to a complete stop 4 seconds after opening the cutter cover (emergency-off function).
You are prohibited to stop the machine by opening the cutter cover.
7.1.8 Finger guard/hand deflector
Hand deflectors and finger guards are fitted inside the cutter cover to prevent access to the rotating cutters. They must not be removed or altered.
7.1.9 Knife cleaning guard
To reduce the danger of injury when cleaning the knives, there is a cleaning guard, which must be stuck on the cutter set when the cutter cover is open.
7.1.10 Cleaning guard for the operator panel
The cleaning guard protects the operator panel from damages resulting from cleaning equipment and cleaning agents. The guard has to be pushed on tightly and has to trigger the emergency-off switch.
7.1.11 Braking device
When hitting the emergency-off switch or when opening the cutter cover the knife shaft is stopped by an electrical brake within 4 seconds. For restarting the machine the cutter cover must be closed and the emergency-off switch unlocked. The purpose of this emergency brake is to reduce dangers. It will wear quickly if used frequently.
Using the main switch deactivates the braking equipment.
7.2 Daily safety checks
Do not operate the machine without properly working protective equipment. The following checks have to be carried out every working day before starting the machine:

 Check whether the cutter head has been installed properly.
 All covers on the machine base must be closed tight.
 Hand deflectors, splash and finger guards, control panel and cutter cleaning safety cover must be provided.
 Lift the vacuum cover when the cutter shaft is running fast. The machine must switch down to a slower speed (50 % slower).
 Actuate the emergency-stop switch or raise the cutter cover at a slower cutter speed (up to 1500 rpm). The cutter shaft must come to a stand-still within 4 seconds. The cutter cover may be raised up to 5 cm, before the emergency-stop is triggered.
 The retention nut for the retaining wall is to be checked for secure fit daily, prior to starting the machine.

36 Evacuating
8.1.2 Description of control unit
Forward speeds of the knife shaft are infinitely variable between 40
and 5000 RPM, and backward speeds between 40 and 500 RPM.
There are 6 memories for forward speeds and two memories for
reverse speeds at the user's disposal. The operator may program
user-specific data in the memories and call it up by pressing a key
(keys refer to Fig.2, item nos. 3 and 4). The cutting mixer has been
equipped with a time-out feature and temperature and bowl rotation
shutoffs.
8.1.3 Cutter driveb
For safety reasons the knife drive can only be started when the
cutter cover is closed.
 Turn on the knife drive by using the green key >I<.
 Select the required cutting speed by using one of the
memory keys >1 - 6<.
As an option:
 Select reverse mixing by using the memory keys > 1 or
2 <.
 Increase the speed by using the key >+<
 Decrease the speed by using the
key >-<
 Turn off the cutter drive by using the red key >0<. The
bowl drive will be switched off at the same time.
If you change the rotational direction of the knives, the bowl
will stop for a short time. After changing the rotational
direction of the knives, the bowl will rotate again
automatically.
If the noise protection cover is opened, the cutter speed will be
limited to 1500 RPM.

8.1.4 Programming speed memory
You can modify and program the saved speeds whether the cutter
drive is running or not.
 Call up the memory for speed, whose value you want to change,
by using one of the keys >1 - 6< or >1 or 2 <.
 Increase the speed indicated by using the key >+<
 Decrease the speed indicated by using the key >-<
 The number of the memory selected will flash, if it has been
modified.
 Hold the respective memory key until the memory's arrow icon
appears in the display. Now the speed is stored. If you release the
key before the memory's arrow icon appears, the original speed
will remain in the memory.
 All 6 forward speed memories and both backward speed memories
may be used or changed.
8.1.5 Basin drive
 Turn it on by using one of the green keys “Bowl speed” >1< ->5<.
 Turn off the bowl drive by using the red key >0<.
 Reset the bowl rotation counter to zero by using the grey
key >0<.
 You can also start the bowl automatically by turning on the
cutters (refer to chap. Service functions).
 The bowl drive is automatically switched to a slower speed, if the
knife shaft has been overloaded.

Attention:
The keys for the bowl speed serve two purposes. If the
cutters are turned off and the bowl is empty, the bowl can be
moved in stepping mode (cleaning function).
Important:
To avoid breaking the knives, the bowl will have to be empty
for operating in stepping mode.

the bowl rotation entry by using the key >E<.
 Reset the bowl rotation counter to zero by using the grey key >0<.
 Turn off the bowl rotation limit stop by pressing the key > < again.
 If the cutting mixer is stopped by means of the bowl rotation
shutoff, the arrow for activating the bowl rotation shutoff will flash

message in the error and message text line. On starting the cutters

 If you reset the bowl rotation counter again by using the grey key
>0< or the key >0< you can repeat the process.

8.1.7 Temperature – shutdown
The temperature shutoff stops the machine if the temperature of the
material to be processed has reached the preset temperature value.
– Activate the temperature limit stop by using the key < >. An arrow
indicates (refer to Display message) if the temperature limit stop
has been activated.
 Enter the desired limit stop of the temperature by using the
numerical keys. Clear incorrectly entered values by using the key
<C>. Finish the temperature limit stop entry by using the key >E<.

8.1.8 Timed shutdown
The time-out stops themachine when the preset time has run out.
– Activate the time limit stop by using the key < >. An arrow

 Enter the desired limit stop for time by using the numerical keys.
Separately enter the values for minutes and seconds. Clear
incorrectly entered values by using the key <C>. Finish each entry
by using the key >E<.
 Set the time value to the preset value by using the grey key >0<.
– Turn off the time limit stop by pressing the key > < again.
 If the cutting mixer is stopped by means of the time-out, the arrow
for activating the time-out will flash and will be indicated at the
same time as a clear text message in the error and message text
line. On starting the cutters again this message will disappear.
 If the time limit stop has not been activated, it will keep track of the
time when the cutter and bowl are running. The timer automatically
resets to zero on starting the knife drive.

8.1.9 Shutoff combinations
All three shutoffs or combinations of these can be activated at any

8.1.10 Evacuating/airing

Manuel evacuating
The evacuation is controlled stepwise with the Pos. 36 key, and the
airing with the Pos. 35 key. By pressing the key, the next step is
started in the following sequence:
* Pos. 36 Evacuate
* Pos. 36 Evacuate Stop
* Pos. 35 Airing
* Pos. 35 Airing Stop
LED lights up when the function is active.
The target value should be set to 0 for manual evacuation.
Evacuating with preset vacuum height (target value setting)
The target value setting is used to stop the vacuum pump when
the specified vacuum height is reached. The pump is switched on
when the value is underranged by 5%. This ensures that the set
vacuum height is maintained.
After pressing the <C> and the keys, the desired vacuum value
can be entered using the number keys
(Fig. 2, (23)).
Clear or correct incorrectly entered values using the <C> key.
Finish entering the vacuum value using the >E< key. This process
remains active until it is interrupted by pressing the ventilation key
or by pressing the vacuum key.

8.1.11 Boiling/Cooling (option)

The cutter shaft and the bowl should be rotating and the vacuum
cover should be closed.
The "Boil" key (32) is used to control the boiling process step-bystep
while the "Cool" key (33) is used to control the cooling process.
On pressing one of the keys >Boil/Cool<, the working area is aired
and the cutter bowl is heated with steam and cooled with water.
By pressing the active key, you can stop the execution of the
function.

8.1.12 Heating (option)

The integrated heating system is used to heat the cutter bowl.
The cutter shaft and the bowl should be rotating and the vacuum
cover should be closed.
Use the "Heat" key (32) to switch this function on or off.
8.1.13 Stuffing plate
For the production of bouillon and boiling sausages the cutting space
can be reduced by setting the stuffing plate. This positively affects
and accelerates the emulsifying process. Attach the stuffing plate
with the retention nut for stuffing plate from the top of the cutter
cover.
The retention nut for the retaining wall is to be checked for
secure fit daily, prior to starting the machine.
Used the accompanying SW 55 open-jaw wrench to securely
tighten the retention nut for stuffing plate.
From the top of the cutter cover close the hole in the cutter cover
using the additional blanking plug when the stuffing plate is not in
use for example, when making raw sausage.
8.1.14 Unloader (Option)
The rotary screen sausage unloader of the machine has its own
drive motor. It is automatically switched on when retracted and
switched off when swung out. When retracted the bowl speed is
reset to the first stage. It can manually be switched back to the
second speed during unloader operation.
Do not lower the unloader into the bowl if the cap of the cleaning
opening is unscrewed.
8.1.15 Knife head
The cutter set is assembled at the machine.

8.2 Operation
 Alternately assemble or disassemble retaining plate.
 Select low speed.
 Open vacuum cover.
 Switch on cutter shaft and bowl.

 Adjust the desired combination of bowl and cutter speeds for cutting or mixing.
 Mix large pieces at a low speed of cutter and bowl.
 Evacuate, boil or cool the sausage meat at low cutter and bowl speed or in mixing cycle.
 Remove the product from the bowl at a low cutter and bowl speed.
 Switch off the machine by using key "0" (Fig. 2, Pos.2).
 Only the bowl is switched off by using the key "0" (Fig. 2, Pos. 8).
 If the shutoff has been activated, the machine will turn off automatically once the preset value has been reached.

9 Cleaning
For sanitary reasons the machine must be thoroughly cleaned every
day. When cleaning do not damage the shining metal surface with
abrasive detergents. The corrosion protection will only be maintained
if the metal has a virgin surface. Do not use metal dissipating
detergents or auxiliary means.
9.1 Preparing the machine for cleaning
 Grease it, if required.
 Swing out unloader.
 Open vacuum cover and cutter covers.
 Turn the main switch off and lock it with a padlock.
 Put the knife cleaning guard on the cutter head.
 Extract the stuffing plate.
 Remove drain plug key by hand under the key.
 Loosen and remove ejector chute.
 Completely unscrew the cutter head or take apart.

9.2 Description of the cleaning and disinfecting process
 Turn off the main switch and lock it before starting cleaning.
 Do not climb on the machine or into the bowl.
 Do not clean the machine with a high-pressure cleaner.
 Use metal fibre-reinforced safety gloves for cleaning.
Cover the operator panel with its protective cover when using foam
cleaners or when hosing it off with water.
 Unless the cutter head has been removed, you have to cover it
with the protective cover.

 Do not use a foam cleaner or a water hose for cleaning:
- the operator panel.
- the coolant air inlet at the lower edge of the back door.
- the interior of the machine stand or the control cabinet.
9.2.1 Cleaning procedure
 Preparation of the machine for cleaning.
 Preclean with brush and warm water or a cleaning solution.
 Intermediate or precleaning is also possible by filling the bowl with warm water (max. 50°C) and running the machine at low speed. Finally, remove the drain plug under the key by hand and drain the water off when the machine is standing.
 All machine surfaces and parts, especially the bowl, unloader, knife shaft arm, cover, bowl scraper, chute, seal gap between bowl and bearing arm, cutter head and cutter shaft seal must be lathered with detergent or thoroughly cleaned with brush and cleaning agent.
 The parts of the cutter head can also be washed and disinfected in a dishwasher (minimum cleaning temperature 80 ºC).
 Use a brush and cleaning solvent to clean the knife shaft sealing.
 Use a brush and cleaning solvent to clean the outer body of the cutter mixer.
 The effectiveness of the cleaning procedure depends on the type of cleaning solution, dirt, the structure of the surface to be cleaned, the temperature and duration of exposure, and the applied cleaning method.
 If required, rinse all surfaces with a disinfecting solution. Prior thorough cleaning is required for properly disinfecting the machine surfaces.
 Rinse the machine with tap water before startup.
 Screw in the basin outlet plug.
9.2.2 Cleaning agents
- Appropriate cleaning agents include alkaline, acidic, and neutral cleaners.
- Alkaline cleaners cannot be universally used because they might be too aggressive.
- Acidic cleaners effectively remove egg-whites, blood, grease, settled deposits, and lime. They should be used as needed.
- Neutral cleaners are used for cleaning smooth, aluminum, and plastic surfaces.
- Foam cleaners are primarily used for cleaning vertical surfaces and parts that are difficult to clean.
- Use an appropriate plastic cleaner for cleaning the keypad and the spice fill cover.
- Always use cleaning and disinfecting agents according to manufacturer's specifications.

10 Preventive maintenance and care
Safety information
 Before starting repair or maintenance works turn off the main switch and lock it.
 You are only allowed to use original spare parts for replacement.
Only electricians are allowed to work on electric equipment.
You are prohibited to change controls, sequences or wiring. If you do that, we shall no longer grant any warranty.
10.1 Resharpening of the cutter set
Best results can only be obtained with sharp cutters.
Have them resharpened by specialists only!

10.2 Lubrication
For lubrication use K+G WETTER food lubricating grease.
 Lubricate lubrication points once a month with1-2 lifts from the lubricating gun (~1,2-2,4 cm3). If too much grease is pressed into the bearings, these will become hot and the bearings may be damaged.
 Let the cutter shaft run at one speed for a couple of minutes after lubrication.
Attention:
The knife shaft sealing disc must be removed if the knife head is not mounted.
 Clean the machine after lubrication.

10.3 Yearly preventive maintenance
To keep the machine ready for operation, the following maintenance
work must be carried out once a year. We recommend a
maintenance contract with WETTER's customer service department
or an authorised garage.
Checklist of yearly maintenance works:
- Grease and check all bearings.
- Clean, check and replace seals, if required.
- Check and tighten the driving belts if required replace. Retighten Vbelts
the first time after 4 weeks.
- Check if the cutter head fits correctly.
- Check the complete electrical equipment including the connection
cables.
- Check all safety devices.
- Final trial run.

10.5 Fault detection and proceeding
In case of machine malfunctions, the machine must not be operated until the malfunction has been eliminated.
Machine does not switch off when the cutter cover is opened.

10.6 Service menu
The control includes several control functions. Call up the service menu by using the key<

The menu offers the following functions:

By using the key <1> you can view the operating data:
1. The display of Operating Hours (indicates the total hours of operation and the accumulated operating hours since the last service).
2. The display Program Version (indicates the software status of the built-in control).
7. The Interrupt List ( indicates all disturbances at the actual time they occurred).
After actuating the key <2 > adjustments can be made to the machine:
1. Language (changes the operating language).
2. Set Time/Date (set the time and date with this function, every modification made will be entered in the Interrupt List).
3. Display Contrast (sets the contrast ratio of the display).
6. Automatic Bowl Drive On (by using this key you can control whether the bowl drive turns on automatically when the cutter head is turned on.) To do so use key <6> and with key <1> select the function).
7. Set Cutter Speed (This menu lets you save the cutter speeds in the speed memories by using the key pad. To do so enter the number of RPMs by using the keys Fig 2, item no.Fehler! Verweisquelle konnte nicht gefunden werden.) and by using the key <E> they will be saved).
